This wok has outer layers of 18/10 stainless steel and a flat base, which makes it induction-compatible, plus three inner layers of heat-responsive aluminium. The middle layer of that aluminium is pure, meaning there is no adhesive agent in it that slightly weakens its power. Unlike a lot of pans which only have heat-conducting metal like aluminium just at the base, this pan has aluminium all along the sides and to the edge, meaning your food will cook faster and more evenly. A glass lid lets you keep an eye on food without releasing any steam. High-quality, scratch-resistant steel that¡¯s polished on the outside but brushed on the inside. Mauviel M¡¯Cook pans, including handles, are polished and finished by hand; this may result in minor abrasions or scuffs.
